mixed greens (with cabbage)
vegan cheese (reference Callie's post to see which type)
mustard
It was delicious and so satisfying!

Taking the Time
As I woke up a good 5 hours later than Callie this morning, I still wanted to have a good, wholesome, vegan breakfast that I could enjoy. I just took out some Irish Steel Cut Oatmeal and instead of popping it in the microwave like so many of us do, I decided, it's a beautiful Saturday morning (afternoon for most other people...) and I should take the time to make a nicer breakfast for myself. I cooked my oatmeal on the stove, cut up a banana into small slices and had half a grapefruit. Instead of going into my room to sit on my bed, watch tv, and mindlessly eat, I went to my dining room table and sat with my dogs and had a lovely breakfast with myself and my four legged friends. From becoming more health conscious, I have learned to take more time in everything I do and not rush through the day but slow down and enjoy it. Ditch the microwave, the drive through, the pick up order, and see how it can change you!
A Vegan Sandwich?!?

Today I will be posting about a wonderful sandwich that I ate for lunch. After working out on my elliptical for 30 minutes and doing some ab workout, I was really in the mood for something satisfying and filling that would leave me feeling light. Luckily, I found the perfect option. I made a vegetable sandwich on low-sodium sprouted wheat and barley bread (the brand is called Ezekiel and I HIGHLY suggest it) with a homemade tahini spread, almond "cheese" (available for purchase at most health food stores) and cut up carrots, cucumber, purple cabbage and red peppers. Make sure that all of your produce is locally grown and organic! The best bet is to buy it from your local farmer's market.
The Recipe: Vegetable Tahini Sandwich
Ingredients:
Two slices of "Ezekiel 4:9" bread (http://foodforlife.com/our-products/sprouted-grain/ezekiel-49)
Almond "Cheese": (http://www.lisanatti.com/index.php?option=com_content&view=article&id=1&Itemid=15)
Purple Cabbage
Raw Carrots
Cucumber
Red Bell Pepper
Raw Tahini
Shoyu sauce
one Fresh lemon
Sea salt
Recipe for Tahini Spread: (Just mix all the ingredients together)
1/4 cup raw tahini sauce
5 drops of shoyu sauce (to taste)
Fresh lemon juice (to taste)
pinch of salt
Spread the tahini spread on both pieces of the Ezekiel bread then layer four slices of the almond cheese, then layer the rest of the vegetables on top. ENJOY!

Happiness is Just One List Away
Today, I realized a very valuable life lesson. There are many variables to our life that are able to create a happy atmosphere for us to live in. We are born knowing what makes us happy, and who makes us happy, so why is it sometimes so challenging to achieve these goals of bliss from day to day? Being as I'm now officially done with high school, I am trying to make the most of my time and do things that bring me joy. As a start, I made a promise to myself that I would take MORE time to practice yoga and meditate. I also did some research and found a list of vegan recipes from various blogs that I plan to make! I'm posting this list of recipes so that I will be inspired and ACTUALLY make them. Here goes nothing... I will post all of the pictures of my attempt at these adventurous recipes! Wish me luck!

Brazil Nut-Banana Pancakes with Banana soft-serve, berries, and cocoa nibs!
Breakfast time! We started off by dehydrating mashed bananas, brazil nuts, flax meal, cinnamon, and water to make the pancake. (recipe found in "Ani's Raw Food Essentials" by Ani Phyo). Meg came to Callie's early in the morning and we threw some frozen bananas in the blender to make a yummy soft-serve, added some coco nibs and multi-colored berries and we had a DELICIOUS breakfast!
Now were on to making raw rye flat bread in our Excalibur Dehydrator!
The Beginning

It's a beautiful Tuesday morning not only because the sun is out and the birds are chirping, but also because Meg Rappeport and Callie Ryan have decided to immerse ourselves in the world of veganism. We have just graduated high school and have the month of May to embark on our senior projects. We have decided that we are both going to go vegan. Not only do we want to help the animals and save the world but we also want to help our bodies. In the following paragraphs we will explain a little bit about who we are.

Hi, I'm Meg! My interest about the world of health food began this summer after I read the book, "Skinny Bitch" Rory Freedman and Kim Barnuion. I became an instant vegetarian and devoted to a new life of healthier, smarter choices for the world and my body. Using Callie as a vegan life coach, I have started each day more inspired to become a better person to the animal society. During my senior project I have decided to go 100% vegan and with the help and partnership of Callie, we will be making new recipes and sharing ideas and thoughts about our experience. I hope you can enjoy our journey and feel inspired!

My name is Callie Ryan and I love health food, the environment, and being happy. I live in a world of cocoa nibs, kale and goji berries and I spent my spare time writing music on my guitar, cooking or reading vegan food blogs. In middle school I was sucked into the dark obsession of baking...no, not vegan baking but REAL baking with ingredients like BUTTER and CREAM and PROCESSED SUGAR. It was bad news. About two years ago I shifted my passion for food from sugary goodness to health food; this would end up being one of the best decisions of my life. The reason I became so attracted to the idea of health food was because of the concept that there are certain food you can eat that not only taste good but they can make you feel good. Food is the foundation of everything around us, however it seems that the majority of Americans no longer have a relationship with what they eat. Up until now I have been vegan except for eggs and fish, but today is the day to change that as well. I realize that if I care about the world, veganism is the only way to go.
